This study was conducted to evaluate the physiological activity of HMR instant rice with eco-friendly vegetables added. The HMR instant rice was prepared by adding eco-friendly dried vegetables, and in vitro physiological activities (total polyphenol content, antioxidant activity, NO production inhibition ability and cytokine production inhibition ability) were measured. The research results are as follows. First, cell viability (MTT assay) showed the lowest toxicity to RAW 264.7 cells by showing a cell viability of 80% or more at a concentration of 62.5-125㎍/mL of HMR instant rice extract added with eco-friendly vegetables. Second, the hot-water extract and ethanol extract of HMR instant rice added with eco-friendly vegetables at 125 ㎍/mL with low cytotoxicity showed inhibitory activity of 6.1-57.5 and 23.6-65.7% in the analysis results for the inhibitory activity of Ntric xide (NO) production. Third, the production inhibitory activity for the infectious cytokine TNF-α was highest at the concentration of 125㎍/mL in both hot water and ethanol extracts. Fourth, the inhibitory activity on IL-6 showed the highest inhibitory activity at a concentration of 125㎍/mL in RTH-B hot water extract at 85.1%, and RTH-A exhibited the highest inhibitory activity at 62.0% in the case of ethanol extract. Therefore, this study verified that the physiological activity was higher than that of ordinary instant rice when HMR instant rice was prepared by adding eco-friendly dried vegetables.
