This study was performed to investigate the removing effects by supercritical carbon dioxide (SC-CO₂) extraction for perilla seed oil. Perilla seed oil was treated by SC-CO₂ with different pressure (125, 175 and 225 bar) and temperatures (25, 35, and 45℃). The volatile compounds in perilla seed oil was extracted by simultaneous distillation extraction (SDE), and analysed by gas chromatograph-mass spectrometer (GC-MS). 6 kinds of off-flavor like green, woody and leaf volatile compounds (1-penten-3-ol, hexanal, perillene, perilla ketone, (E)-α-bergamotene, ... 전체 초록 보기
