Fresh seafood is very delicate as the quality can be deteriorated with simple temperature abuse. In a way to extend its shelf life, seafood processing traditionally started with drying, salting, freezing, fermentation, and canning. Most recently with innovated research and development along with consumer marketing studies, various processing technologies have been introduced to our seafood industry successfully: minimally processed, ready meal, MAP, clean label, and others. These are what we know and what we have used for processed seafood. This presentation will cover what can be our future and global trends for processed seafood.
Shaka retort, unlike conventional static retort, shortens thermal time by 90% while achieving microbial safety. It provides increased throughputs, improved texture/taste/appearance, and better nutrition. Shaking a basket in a retort cabinet extremely fast results in uniform and fast heat penetration. Shelf-stable seafood products can be made with significantly improved sensory characteristics. Robo-pack and automation are our industry’s future to minimize workforce and workman’s injury. Flexibility will be provided by a simple click of a button. Accuracy will be guaranteed due to sturdy repeatability and precise tooling. As the movement is standardized, consistency will also be provided. Sustainable fishery practice and management is what we will have to follow for our better seafood resource.
