Digital transformation based on cutting-edge information technologies such as artificial intelligence (AI) and big data can induce innovative changes in certain industries. In case of functional foods, the development process of functional food materials includes discovery, processing and production, evaluation of bioactivity and safety, approval of functional food materials, and product development. This process is costly, timeconsuming, and labor-intensive, and there exist many trials and errors throughout the process. However, AI-driven development of functional food materials can streamline the processes, reduce time and costs, and improve the productivity and quality of functional foods. This review explores the AI utilization strategies across the development of functional food materials to enhance the competitive edge in the functional foods industry. It also reviews recent technical trends both from the perspectives of research and industry.
